One of the biggest influences on Texas BBQ comes from the German and Czech immigrants who brought over their smoking techniques. Over time, these methods evolved into what we now know as Texas BBQ, with an emphasis on beef, especially brisket. That’s right – while many BBQ styles focus on pork, Texas BBQ is all about beef!
Key Elements of Texas-Style BBQ
Now, let’s break down the key components that make Texas-style BBQ stand out:
1. The Meat: Brisket, Ribs, and Pork Butts
Texas BBQ is most famous for its beef brisket, which is slow-cooked for hours until it’s tender and juicy with a smoky flavor that’s hard to beat. The slow-smoking process creates a crispy, flavorful "bark" on the outside while keeping the meat moist and tender on the inside.
But brisket isn’t the only star! Pork ribs and pulled pork are also staples of Texas BBQ. While you’ll find pork in some BBQ styles, in Texas, it’s usually smoked in a way that highlights the natural flavors of the meat, without overwhelming it with sauce.

The rub and the smoke do most of the talking, with sauce often being served on the side—if it’s used at all. That said, some places in Texas do serve a tangy, tomato-based sauce on the side, which complements the meat without overshadowing it. Here at Fire & Ice, we serve a sweet and tangy sauce as well as a vinegar based sauce to be able to accommodate your preferences!

After a few months, he couldn't stop thinking about sharing this style of BBQ with his customers here in Jackson. So whether you’re a Texas native, new to the BBQ world or a fan of a different cooking style, we’re here to offer you a taste of Texas with every bite.
